    Coconut French Toast (Gluten-free, Dairy-free)

    This coconut French toast is made with whole grain bread slices soaked in a rich egg mix, served with blueberries, bananas, coconut flakes and maple syrup on top! Enjoy the BEST gluten-free, dairy-free French toast in minutes.

    What I love about this recipe is that it is so easy to make but it tastes even better than classic french toast. The high fat content in the coconut milk makes the texture so rich without using any sort of cream. The hint of coconut gives a perfect amount of tropical flavor as well.

    This has been our go to recipe on lazy weekend mornings for the longest time - I mean, what could be better than warm French toast with a drizzle of maple syrup?

    How to make coconut French toast

    The way to make coconut French toast is pretty similar to how you do a regular French toast. So here are the simple steps... Make the egg mix, dip the bread slices, cook on the stovetop and serve with your favorite toppings!

    Soaking time for the bread makes a difference in the overall texture. If you soak the bread for a longer time, the texture becomes more like bread pudding - nice and gooey on the inside. And a quicker soaking time gives a crispier result.

    Ingredients for this recipe

    • Full fat coconut milk - Lite works as well if you prefer. Also see below for tips on coconut milk
    • Eggs 
    • Maple syrup
    • Vanilla extract
    • Gluten free whole grain bread slices - or any gluten free bread you like!

    Optional (but recommended) toppings;

    • Blueberries
    • Banana slices
    • Unsweetened coconut flakes
    • Maple syrup 

    New to coconut milk?

    Depending on the brand or the storing temperature, coconut milk may be partially solid when you open the can even if you shake well in advance. In that happens, transfer to a microwave safe bowl and microwave for 10 seconds or so until you no longer see any lumps.

    You can also let the unopened can sit in a hot water bath for a few minutes. Once melted, stir well before using.

    Simple steps to make coconut French toast

    1. Combine the coconut milk, eggs, maple syrup, vanilla extract in a bowl and mix well.
    2. Soak the bread slices in the egg mix for about 3 minutes. Longer the softer texture, shorter the crispier texture.
    3. Cook the soaked slices in a pan until golden brown on both sides.
    4. Top with blueberries, bananas, coconut flakes and additional maple syrup. Serve warm.

    Ingredients
      

    • ⅔ cup full fat coconut milk
    • 2 large eggs
    • 1 tablespoon maple syrup
    • ½ teaspoon vanilla extract
    • 6 slices gluten free whole grain bread slices more or less

    For toppings

    • ½ cup blueberries
    • 1 banana sliced
    • 2 tablespoons unsweetened coconut flakes
    • Maple syrup as much as you like!

    Instructions
     

    • Combine the coconut milk, eggs, maple syrup, vanilla extract in a bowl and mix well.
    • Soak the bread slices in the egg mix for about 3 minutes. The longer the soaking time is, the softer the texture will be.
    • Heat up some cooking oil in a pan. Cook the soaked slices until golden brown on both sides.
    • Top with blueberries, bananas, coconut flakes and additional maple syrup. Serve warm.
