    This salad is light and easy, yet packed full of delicious flavors. The peppery taste of the arugula and tender baby spinach go so well together, along with the creamy avocado and crunchy carrots. 

    The dressing is primarily made with tahini paste, sesame oil, and fish sauce. It is packed with umami with the perfect balance of sweet, savory, and tangy flavors.

    Dressing:

    • Tahini
    • Sesame oil
    • Honey
    • Fish sauce
    • Rice vinegar
    • Water
    • Ground pepper

    Salad:

    • Baby arugula
    • Baby spinach
    • Carrot - Peeled into ribbons
    • Cherry tomato - Halved
    • Avocado - Thinly sliced

    Toppings:

    • Cilantro leaves
    • Roasted white sesame

    How to make spinach arugula salad

    Step 1. Make the dressing by combining all dressing ingredients together in a bowl. 

    Step 2. On a large plate, arrange arugula and spinach evenly.

    Step 3. Arrange carrots, cherry tomatoes, and avocado over the leaves. Top with cilantro and sesame. Drizzle the sesame dressing.

    Tips

    • To avoid the salad getting soggy, drizzle the dressing over the salad right before serving.
    • You can also switch out the sesame topping to crushed nuts such as cashew or peanuts!

    Can I make the dressing ahead of time?

    You can make the sesame dressing up to one week in advance. Cover tightly and keep refrigerated. 

    How can I store the leftover salad?

    You can keep the leftover spinach arugula salad in the fridge for up to one additional day. If it is already dressed, the leaves will wilt but it will still be tasty!
