This recipe is favored by everyone in the house. Kids love the sweet savory flavor, and the adults can spice it up however they want to with toppings.

Easy homemade teriyaki sauce
This may bring a surprise to you - teriyaki sauce is made with just three ingredients!
Sake, soy sauce, and sugar are all you need and it’s simply cooked down to thicken.
It takes only a minute to make this sweet savory sauce, by combining the ingredients together in cup. Unlike the store bought sauce, it’s free of gluten, preservatives and high fructose syrup.
Topping ideas
You can be as creative as you want with the toppings!
My favorites are
- Toasted sesame - give a roasted flavor with a bit of crunch
- Chopped scallions - adds a mild kick
- Chili threads - adds a smoky earthy flavor with a beautiful color pop
- Shichimi pepper - Japanese style pepper blend. It’s mildly spicy
- Sriracha sauce - adds real spiciness to the bowl with a slight sourness
- Semi boiled egg - undercooked yolk adds a slightly sweet and creamy flavor. I recommend smashing and mixing into the rice!
Ingredients and substitutes
- Salt
- Boneless skinless chicken thighs
- Olive oil
- Garlic
- Sake (cooking rice wine) - dry white wine works as well
- Tamari soy sauce
- Organic cane sugar - or sugar of your choice. Monk fruit sugar works for a low sugar option
- Shishito peppers - or any other vegetables such as broccoli and carrots
- Cooked rice - preferably Japanese rice or any short grain rice

How to make teriyaki chicken donburi
1. Make the teriyaki sauce - combine the teriyaki sauce ingredients together in a cup and set aside.
2. Rub the salt into the cut up chicken.
3. Cook the garlic and chicken until the chicken is just barely cooked.
4. Pour in the teriyaki sauce mix. Cook and reduce the sauce until thick and sticky.
5. Sear the shishito peppers in a pan for 2-3 minutes until they are blistered. Sprinkle 2 pinches of salt.
6. Serve the chicken and shishito over rice.
7. Top with sesame, chopped scallions, and chili threads (optional).

Storing and meal prep direction
Any leftover chicken can be stored in the fridge for up to 3 days. Microwave or cook over the stovetop to heat up.
For meal prep, you can double or triple this recipe, pack in airtight containers with rice and shishito (or any vegetable) on the side.

Teriyaki Chicken Donburi (Rice Bow)
Ingredients
- 1 pound boneless skinless chicken thighs cut into a bite size pieces
- ½ teaspoon salt
- 2 teaspoons olive oil
- 2 cloves garlic minced
- 2 cups cooked rice preferably Japanese rice
For teriyaki sauce
- ½ cup sake
- 2 tablespoons tamari soy sauce
- 2 tablespoons organic cane sugar or any sugar
For shishito peppers
- 16 shishito peppers washed and pat dried well
- 1 pinch salt
Toppings (optional)
- chopped scallions
- toasted sesame
- chili threads
Instructions
- Combine the teriyaki sauce ingredients together in a cup and set aside.
- Rub the salt into the cut up chicken.
- Heat up the olive oil in a pan and cook the garlic until fragrant.
- Add in the chicken and cook until just barely cooked.
- Pour in the teriyaki sauce mix. Cook and reduce the sauce until thick and sticky.
- Heat up some cooking oil in a clean pan, and sear the shishito peppers for 2-3 minutes until they are blistered. Sprinkle a pinch of salt.
- Serve the chicken and shishito over rice.
- Optional: Top with sesame, chopped scallions, and chili threads.
