    Matcha Banana Nice Cream (3-Ingredients, No-Churn)

    Matcha banana nice cream is creamy, rich, aromatic but way healthier than classic ice cream! It is gluten-free, dairy-free, and refined sugar free, plus ready in 5 minutes in a blender or food processor.

    The main ingredient for this recipe is just frozen bananas! It is incredibly easy to make and is a perfect dessert to keep in the freezer so you can reach for a scoopful whenever you want.

    You will not need an ice cream maker, there is absolutely no need to churn, and 3 simple ingredients are all you need. Is there any reason not to try this recipe?!

    What Does It Taste Like?

    While you get the great matcha flavor, you will still taste the bananas thanks to the ripe bananas. So don’t expect it to be exactly like store bought traditional ice cream.

    It is naturally sweetened with maple syrup, so it is light yet decadent with a rich creamy texture.

    Soft Serve vs Scoop-able Consistency

    This nice cream comes out in soft serve consistency when it is just made. If you are looking for a firmer texture that you can scoop, freeze for 2 hours or so. If you end up freezing for a longer time, let thaw for 5-10 minutes to soften slightly. 

    How to Freeze Bananas

    Once you peel and slice the bananas, there are two ways to freeze.

    1. Freeze in an airtight food storage bag - Lay out the banana slices in one layer and freeze. Once they are frozen, you can gently squash the bag to separate out the slices.

    2. Freeze on a baking pan: First, make sure to line the pan with a parchment paper or a silicone mat to prevent sticking to the surface. Then arrange the slices in one layer and freeze overnight. Once frozen, transfer to an airtight container to store for longer.

    Ingredients & Substitutions

    • Large bananas - ripe ones will make the nice cream sweeter
    • Maple syrup - honey works as well but since it is thicker than maple syrup, you may need a splash of milk (any type) to loosen the mix
    • Matcha powder - I usually use culinary grade

    How to Make This Recipe

    1. Pulse frozen bananas, maple syrup and matcha together in a high-speed blender or a food processor with a ‘S’ shaped blade.

    2. Process until smooth: Once broken down into chunks, process until creamy and smooth, for 3-4 minutes.

    3. Serve right out of the blender (food processor) for soft served style, or freeze for about 2 hours for a scoop-able consistency.

    Frequently Asked Questions

    My nice cream does not blend. What should I do?

    If you struggle to blend everything well, add a splash of milk of your choice to thin out, 1 tablespoon at a time. You can also thaw the banana slices for about 5 minutes so the blade(s) can cut through easily.

    Can I blend unfrozen bananas with other ingredients, then freeze?

    Yes I have tried this reverse method but it rather comes out like a block of ice. You will also need to churn the mix once in a while to whip in some air for a creamy smooth texture.

    Can I freeze the bananas whole, instead of slices?

    You totally can! While that would be a faster way, you will have to be careful slicing up frozen bananas before adding them into your blender/ food processor.

    How long can I store matcha nice cream?

    Matcha banana nice cream can be stored in the freezer for 2-3 months. Make sure to use a clean spoon to serve every time, and keep covered tightly so it won’t absorb the smell of other foods.

    Can I use ceremonial grade matcha?

    Of course! Ceremonial grade matcha will have less of a bitter taste compared to culinary grade, so go for it if you would like that. The only trade off is that it will be a little pricier than culinary.

    • 4 large bananas sliced into coins and frozen overnight
    • 4 tablespoons maple syrup or more
    • 2 tablespoons matcha powder I use culinary grade
