What Does It Taste Like?
While you get the great matcha flavor, you will still taste the bananas thanks to the ripe bananas. So don’t expect it to be exactly like store bought traditional ice cream.
It is naturally sweetened with maple syrup, so it is light yet decadent with a rich creamy texture.
Soft Serve vs Scoop-able Consistency
This nice cream comes out in soft serve consistency when it is just made. If you are looking for a firmer texture that you can scoop, freeze for 2 hours or so. If you end up freezing for a longer time, let thaw for 5-10 minutes to soften slightly.
How to Freeze Bananas
Once you peel and slice the bananas, there are two ways to freeze.
1. Freeze in an airtight food storage bag - Lay out the banana slices in one layer and freeze. Once they are frozen, you can gently squash the bag to separate out the slices.
2. Freeze on a baking pan: First, make sure to line the pan with a parchment paper or a silicone mat to prevent sticking to the surface. Then arrange the slices in one layer and freeze overnight. Once frozen, transfer to an airtight container to store for longer.

- Maple syrup - honey works as well but since it is thicker than maple syrup, you may need a splash of milk (any type) to loosen the mix
- Matcha powder - I usually use culinary grade

1. Pulse frozen bananas, maple syrup and matcha together in a high-speed blender or a food processor with a ‘S’ shaped blade.
2. Process until smooth: Once broken down into chunks, process until creamy and smooth, for 3-4 minutes.
3. Serve right out of the blender (food processor) for soft served style, or freeze for about 2 hours for a scoop-able consistency.
