What is ‘tataki’?
Tataki refers to a Japanese cooking method rather than the ingredient itself. Tataki means to flash cook the surface of the meat or fish, then slice and serve with herbs and vinegar or citrus infused soy sauce.
Traditionally, bonito (katsuo) or skipjack tuna was popular for this method. Nowadays, we see a wide variety of tataki dishes made with different fishes and meats, and the sauce is often made in a Western style using ingredients such as fried garlic and olive oil.
